Tuscan Delight Plate: Cannelloni beans with fresh thyme, roasted garlic and olive oil plus baked walnut crusted tofu “UNchicken Parm” smothered with tomato sauce n’ “mozzarella cheeze” served over bed of brown rice penne tossed in a rich kale pesto
Americana Plate: Wild n’ brown rice medley with toasted pecans, rosemary, sautéed onions and capers served with smashed roasted acorn/butternut squashes plus loads of oven baked cauliflower with side of parsley walnut pesto
Pinto Tortilla Chili: Warming pinto bean chili simmered with sautéed onions, green peppers and zucchini plus corn tortillas garnished with roasted corn, tomatoes and cilantro
“Burger n’ Fries”: Brown lentil, sunflower seed, onion, brown rice “burger patty” topped and baked with sun-dried tomato sauce served with pan seared thyme infused potato “fries”
FAB-wich: Grilled buckwheat flax bread stuffed with basil chickpea hummus, kalamata olives, grilled onions, grated beets, steamed garnet yam, stone ground mustard and lettuce
Coconut Curry Tofu Stew: Vegetables (carrot, kale, onion, celery, butternut squash, green peas) and tofu simmered in coconut curry broth with basmati rice garnished with fresh basil
Pad Thai Noodles: House made peanut ginger Thai sauce tossed with Thai rice noodles topped with marinated tricolor slaw with cumin vinaigrette garnished with chopped peanuts
Veggie Mania: Roasted butternut squash plus sautéed Brussels sprouts n’ onions topped with massaged kale salad in herbed lemon vinaigrette
Savory Italian Tart: Walnut oat crusted baked tart filled with sautéed broccoli rabe/kale and “mozzarella cheeze” topped with grilled onions all drizzled with herbed mustard sauce
Apple Crumble n’ Raspberry Cream: Sweet apples baked with oats, walnuts and chocolate chips topped with raspberry coconut cashew cream
